Red Meat Market is proud to reprise our unrivaled hands-on Whole-Hog Breakdown butcher class and tasting experience. We think Pork is the perfect Fall culinary treat and the weekend before Halloween is the perfect time!

We welcome everyone to our Halloween Hog Breakdown Class with a wide range of culinary and carnivorous backgrounds who have passion or simply a curiosity for the art of butchery.  Our special Cut, Cook & Carry Butcher classes offers foodies, grillers, chefs and meat lovers the opportunity to learn the art of butchery from Master Butchers beginning with how to break down a carcass, to the art of cooking local fresh meats with Chef Ryan Hutmacher of The Centered Chef. Participants will also have the opportunity to take home the meat they cut!

CUT, COOK, EAT, AND CARRY!  WE’LL PROVIDE EVERYTHING YOU NEED.  BUT HURRY! 

CUT

This not just a demo but real hands on meat cutting experiences under the supervision and tutelage of great Master Butchers! October’s Red Meat Market Butcher Class welcomes Ben Harrison, Master Butcher from Chicago’s Standard Market for a 3 hour, hands-on class.  We’ll guide you through the process from the moment the hog carcass is delivered to when it reaches your taste buds!! Learn knife skills, butchering techniques and how to breakdown a whole hog carcass into tasty pork cutlets, tenderloins, roasts and ground!  You’ll then take each part and break it into standard and some special cuts traditionally not found at your local grocer! You’ll feel the meat between your fingers, experience the smooth cut of the knife, smell the fresh aromas and be part of the renaissance of the local butcher.

You’ll even meet the provider who raised this animal!  Participates will have the opportunity to breakdown a Heritage Berkshire Hog carcass, raised without antibiotics, from Gunthrop Farms.

COOK

Our butcher class includes a cooking demo with you guessed it, tasty meaty dishes so you’ll enjoy lunch on us! This butcher class will be held in the KITCHEN at Centered Chef, Chicago’s most progressive culinary event space!  As part of your experience, Founder and Owner, Chef Ryan Hutmacher, will show you how to prepare it in a way that will honor the purity of this fresh, local product, in his clean-comfort style!  As practice makes permanent, you’ll not only be learning about sustainability and practical cooking techniques, but you’ll also be savoring those new found meat cookery skills throughout the event!

The Centered Chef Studios is a pristine culinary kitchen and event location with easy access by train or available street parking!

CARRY

Participants will have the opportunity to take home meat they cut in each class! Each person will go home with pounds of personally wrapped cuts which may include a variety of chops, cutlets, roasts, ground and more.  You’ll also receive a free Red Meat Market Baseball cap
